Greek Pasta Salad {Good Food}

The other day when I was waiting in line at the deli to pick up my turkey, I decided to give in and purchase some of the delicious looking pasta salad I always have my eye on. It was an amazing choice because that Greek Pasta Salad was the bomb dot com. It was so good it inspired me to make my own…I’m so excited to take this to work tomorrow for lunch!

Lemon, olives, sun dried tomatoes, feta

Greek Pasta Salad

1/4 Cup Black Olives, chopped

1/4 Cup Kalamata Olives, chopped

Cucumber, chopped

Sun dried tomates

Feta Cheese

3 Cups Noodles (I used whole wheat penne noodles)

For Dressing:

1/4 Cup Lemon Juice

2 Teaspoons Extra Virgin Olive Oil

1 Teaspoon Oregano

Salt & Pepper to taste

Cook noodles according to package, allow to cool. Add olives, sun dried tomatoes, and cucumbers – you can really add anything you want to a pasta salad, since I am not a huge fan of tomatoes I opted for sun dried tomatoes for that bit of flavor. Whisk together lemon juice, EVOO, Oregano and S & P – toss noodle mixture in dressing. Add feta cheese and toss again. Serve cold 🙂
